For all you Brooklynites or vistors to the area, I have found a nice little gem in Crown Heights, Brooklyn.  It’s a new little cheese shop called Wedge and it’s a great new store to the area.

There are many little items to browse through in the store, but their big ticket item is the cheese. There are all sorts of other products to buy like jam, condiments and different beverages. They even have picnic baskets to buy to take to the park!

Now, I should be writing about all the cheeses I’ve tried, but, well… I haven’t tried them yet. I’m really quite disappointed in myself. Please don’t stop reading. There is more to this blog.

Even though it is in many ways not as exciting as cheese,  I have been trying a pasta they sell called Sfoglini!  It’s a great organic pasta that is made with semolina flour.  I know that “it’s just pasta.” So, why not get the cheaper kind at the grocery store? But I have to say I’m hooked. I’m not sure what exactly makes it taste so good (probably the semolina flour), but the pastas has a very hearty taste to them and they taste far more filling than normal pasta I have cooked in the past.

When I went to their website at sfoglini.com, I also read they use bronze dies which adds to the texture of the pasta. Also, they air dry the pasta which adds to the flavor. Clearly, I’m not making pasta at home so I think for 10 dollars this is a great find.

The nice thing is they make a variety of pastas that I think are fairly unique. They have a great pasta called Mint Radiator. It’s made with pureed fresh mint and it’s divine. I’ve also bought a pasta that is called “trumpets” which basically are shaped like a “flower or horn.”

I’ve made two pasta dishes so far but my favorite of the two is “Mint Radiators with Yellow Zucchini”

This dish can be made on any weeknight. It’s very filling and the zucchini makes me feel like I don’t have to made a side salad or cook another vegetable. (I’m a big fan of the one dish dinner).

Mint Radiators with Yellow Zucchini
Recipe Type: Vegetarian/Main Dish

Ingredients
  • 6 oz Sfoglini Mint Radiators
  • 2 1/2 oz yellow zucchini (cut in moons)
  • 1 oz diced red onion
  • 1 oz chopped kalamata olives
  • 6 chopped mint leaves
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan cheese
  • pinch of chili flakes
  • salt and pepper
Instructions
  1. Heat 3 quarts of salted water in a large pot and bring to a boil.
  2. Add pasta and cook for 5-8 minutes.
  3. While pasta is cooking, saute the zucchini and onions in 1 tbsp of olive oil over medium to high heat.
  4. After about 1 minute, add the olives and a pinch of salt and 1-2 tbsp of the pasta water so the onions don’t caramelize.
  5. Cook for another 2 minutes making sure the zucchini stays firm.
  6. Add the pasta, 1 tbsp of olive oil and 2 tbsp of cheese and a splash of pasta water to saute pan and stir together.
  7. Toss in mint leaves and a pinch of red chili flakes.
  8. Cook for another 2-3 minutes.
  9. Add salt and pepper to taste and top off with grated cheese.

Zucchini Sauteed with Tomatoes and Marjoram

If you’ve got a garden, a CSA box, or just try to buy seasonally, you’re awash with zucchinis right now, and maybe even the more exotic summer squashes–orb-shaped, pattypan, crookneck, or something resembling a UFO.  Like you, I’m always trying to find ways to deal with it all.   I consider it at a minimum a good deed and perhaps worthy of some small amount of karma to share ideas for using this bounty, and so here I am.  With a recipe that uses 3 pounds worth of your midsummer windfall.

As I confessed last year (yes, click that link for another recipe) I’m not always the biggest booster of summer squash.  At its worst, it’s waterlogged, perhaps a bit slimy, and in those vegetable “medleys” seems to impart an overcooked taste to otherwise well-prepared meals.  But it can be as fresh tasting as a summer vegetable should be if prepared right.  For me, one of the tricks is salting to draw out excess liquid.

It seems a bit counterintuitive that this should be the case:  we want our produce to be bursting with juices, not old, curmudgeonly, and wizened.  And zucchini’s juices aren’t necessarily objectionable in and of themselves, and that liquid in fact is what makes zucchini breads and muffins moist and delicious.  Contrast this with eggplant where salting importantly extracts bitterness.  With many savory preparations of zucchini, however, I think it’s a matter of improving the texture.  Less water in your vegetable  ultimately means less mushiness, and it allows the flavors of everything you’re cooking that zucchini with to absorb into the squash’s flesh.  When that’s tomatoes and marjoram melding with your zucchini, you’ve got something good on your hands.

This makes an easy side dish (I’m thinking a simple steak with oregano and olive oil). Or if you have good crusty bread around to mop up the summer flavors, a nice light meal.

Zucchini Sauteed with Tomatoes and Marjoram

Zucchini Sauteed with Tomatoes and Marjoram (inspired by several recipes in Marcella Hazan‘s Essentials of Classic Italian Cooking).

  • 3lb zucchini or any mix of summer squash
  • salt (preferably kosher)
  • 2-3T olive oil
  • 1 onion, thinly sliced
  • 2-3 cloves garlic, crushed and minced
  • 1 28-ounce can tomatoes (if not already chopped, chop before adding to recipe, reserving the juice for the recipe as well)
  • 1/4t dried marjoram (1t fresh)
  • one onion, finely chopped

Slice the zucchini as thinly as possible, then layer in a colander, sprinkling salt as you go.  Place over the sink, toss a bit to distribute the salt, and then allow to drain for at least 20 minutes, or longer if you wish.  While you wait, you can begin preparing the remainder of the recipe.  Note that when you are done draining, you should taste the zucchini before proceeding with the next step to gauge how much salt remains–you may need to pat it dry or lightly rinse.  If only slightly oversalted, this is fine but adjust the salt later in the recipe to take this into account.

Preheat the oven to 350F.

Heat the olive oil, then add the onion when hot.  Cook over medium heat until soft.  Add the garlic and marjoram, cook for 30 seconds, and add the chopped tomatoes.  If ready, you can add the zucchini at this point.  Or you can allow the zucchini to drain further and just simmer this tomato-onion sauce over medium low.

Stir in the zucchini, and cook over the stove for about five minutes.  Then put in the oven, without a lid, and bake until the zucchini is tender and its juices have baked away.  This generally takes about 20-30 minutes for me, but as long as your zucchini is tender to your liking, you’re good to go.

Garnish with parsley and serve immediately.  Nice to eat with crusty bread which sops up the juices.

Zucchini Pancakes with Dill

I have suffered my share of unsuccessful attempts at zucchini pancakes, and it all comes down to this:  inadequate (and in one case, nonexistent) draining of the shredded zucchini.

But what a difference it makes!  I often try to figure out if recipe steps are actually essential, or are just fussiness.  This step, as my husband may be heard saying to our son at bedtime, is “not optional.” 

Besides that not unimportant impact on the pancake’s integrity (so you are not left with, let’s call it what it is, slop), the salting also brightens the flavor of the zucchini and improves its texture.  I’m not always a fan of many preparations of squash (summer or winter) because they are simply just too water-logged.  Roasted?  Good.  Sauteed?  Meh.  Steamed?  Help!  Dry vs. wet. It’s all making sense now.

Many recipes for these griddlecakes suggest a bit of shredded onion for flavor, but I threw in dill instead.  As a devoted eater of Greek and Turkish food, I know that cucumber (another vegetable improved by a pre-salting to draw out water) and dill go together well.  Zucchini sort of looks like cucumber, so…why not?  (Is that a weird way to go about flavor pairings?  Oh well).  It worked.  Dill resulted in flecks of vibrant green and a fresh, ferny flavor.  I enjoyed it with my homemade yogurt, which I always have plenty of (and which refers back to the tzatziki inspiration for this dish).

A successful venture:  pancakes finally mastered, a zucchini recipe that pleases my picky taste buds.  Oh, and once you’ve drained the zucchini, it’s fast too!

Zucchini Pancakes with Dill

  • 1 1/2 lb zucchini (about three medium)
  • 1t baking powder
  • 1/3c flour
  • salt
  • 2 eggs
  • 1/4 c fresh dill, minced
  • butter for frying

Shred the zucchini, layering with salt.  (I sprinkled about a half teaspoon of salt after each addition of zucchini).  Place in a colander to drain for at least half an hour, stirring occasionally.  Squeeze out the remaining liquid, as much as you can.

Mix the zucchini in with the rest of the ingredients.  Heat a heavy skillet or cast iron pan over medium-high heat and melt the butter, just until the foam subsides.  Add the batter, forming pancakes.  After a few minutes, when the top has begun to firm up slightly, flip to cook the other side.  Pancakes should be crispy brown on both sides.  Serve immediately, with yogurt.

These cook fast, but you can keep them warm in a 200F/90C oven.
